My favorite dish is grilled lobster and I look all varieties of lobster dishes whether its grilled lobster, sautéed lobster or even soup. I am always seeking to find new recipes or to learn how other cultures cook their lobster.
Lately an increasing number of lobsters that are blue, red, yellow, white, calico (mixed orange and black), and even split, where the right and left sides of the lobster are different colors have been reportedly found.
The unusual colors are caused by variations in the Lobster genes that affect the production of pigments. Aside from their color, the lobsters are normal and safe to eat.
It is likely that more odd-colored lobsters are being spotted because the overall harvest of lobsters has incrementally increased within the last twenty years. Advances in technology and the advent of easily accessible high resolution cameras in our smart phones have also made it easier than ever to share sightings of colorful lobsters.
